- Lamb Chops
- 5 Carrots
- Handful of Green Beans
- 4 Zucchinis
- 1 Red Pepper
- 1 Red Onion
- Salt and Pepper for Taste
- 3 Tbsp Lamb Spice
- 1 Tbsp Cajun Spice
- Olive Oil
Chop carrots up into nice chunks and steam for about 10 – 15 minutes.
In the meanwhile, chop up your zucchini into chunks, red pepper into strips and red onion into strips (unfortunately my examples only include zucchini and carrots, but the extra veggies I have mentioned make for a spectacular dish).
Once your carrots are done steaming, pack your other chopped vegetables along with your steamed carrots into an oven dish. Sprinkle with some lamb spice and olive oil.
Next sprinkle your chops with lamb spice, cajun spice and olive oil. Place your chops ontop of the vegetables in the oven dish.
Cover your oven dish with foil and bake in the oven at about 180 – 200 degrees Celsius for about 15 minutes. Then take the dish out, turn and spice the chops. Recover the dish with the same tinfoil and place back in the oven to bake for 20 minutes.
Your roasted lamb chops and vegetables should then be ready to eat! Yum!
Rice is a very good side dish with this meal if you are into carbs. Brown rice or mashed sweet potato will be just as amazing!
