Stuffed & Bacon Wrapped Chicken


Chicken Breasts

Bacon Strips





Peppers / Chilies

Spinach (Optional)

Mushrooms (Optional)


How to:

Slice open the chicken breasts for stuffing. Set the oven on preheat at a temperature that you would usually roast your chicken (mine is about 180 degrees C). Place your chicken breasts on a pan with the strips of bacon underneath to make wrapping easier in the end.

Chop up your feta, spinach, tomato, peppers/chilies and toss then together (adding in some chopped mushrooms is really yummy too). Take this mixture and stuff it into the sliced open area of the chicken breast.



Once this is complete wrap the bacon over the chicken. If it is struggling to stick, you can use toothpicks to hold it together although this isn’t usually necessary.

Now, smeer some chutney over the bacon. This gives it a really delicious sweet and sour taste in the end, especially if you add a dash of lemon juice as well.


*Don’t forget salt and pepper for taste.

You can leave this in the oven for about 25 – 35 minutes checking up in it every now and then until its ready.
